Quick question about Enchanter

What happens if an enchanter tries to grant an attribute to a character who already has five attributes?

He gets it no problem. Same as combo attributes: there isn't any hard limit to FFX attributes. The only hard limit is on the number of attributes initialized with the built-in mechanism or the user interface.
