i think this would be rather easy make a simple story and have new maps and some new model easy right?

No.  It wouldn't.  Mods are tough to make and very time consuming.  EZScript would help, but two things here would make it more difficult.

new maps

Time consuming, but not that hard to do.

new model

Time consuming and hard to do.  More than likely, you'd have to get some one else to do it.  You're chances are not good.

If you want to mod freedom force, why don't you pick something with readily available meshes and maps first?  Ask permission to use them, which should be easy to get, and get to work.  You'll learn a lot, and if you release something good, people will be more likely to help you.
