Given that unless you're on the winning side you get turniped to death, I assumed that most people would choose to side with whoever was going to win anyway.

Is that really how you'd choose sides in a fight? Always go with the obvious winner? I thought we were supposed to be heroes here!

Anyway, if you pick a side you think is going to lose, and then help them win, wouldn't they be a lot more greatful than if you pick a side that's going to win anyway? I mena, don't magical creatures like pirates and ninjas reward people who help them out with special gift certificates or something?

There's loyalty, and then there's survival.  Since it was stated that the end result was you either win or get hunted down, that changes things quite a bit.  At no point was it ever stated that any of the choices was "evil" (although, zombies are just inherently creepy), so it's not much of a morals call.  Ninjas can be honorable, pirates can have a sense of fairness, leprechauns can be mischevious (but not necessarily evil), and dinosaurs are just plain animals, and robots can have benevolent programming.  Since it's your life on the line, and you're not exactly being asked to team up with Terrax, Lex Luthor, or Ted Bundy, I don't think it's going to be a choice that anyone should lose any sleep over if they hedge their bets a bit.
